Hotels committed to responsible tourism
Since the signing of the environmental charter created by the Association des Industries Hôtelières and signed by all the partners in 2007, "Green Teams" have been set up within the establishments to implement and develop concrete solutions to reduce their ecological impact. The main areas for improvement are water management, energy savings and recycling.
The commitment of hotel establishments is confirmed by the environmental certifications and labels they hold.
To date, more than 88% of the Principality's rooms have been certified, and the main labels are :
- La Clé Verte: Le Méridien Beach Plaza, Métropole Monte-Carlo, Novotel Monte-Carlo
- Planet 21 (Accor Group environmental certification) for the Fairmont Monte-Carlo,
- Green Globe (the only certification that also takes social conditions into account): Monte-Carlo Beach Hotel, Monte-Carlo Bay Hotel and Resort, Hôtel Hermitage Monte-Carlo and Hôtel de Paris Monte-Carlo
- Ecoleader : Trip Advisor's popular programme for holidaymakers. The label has been awarded to several hotels in the Principality.
The hotel industry reiterated its commitment alongside the Tourism and Convention Authority and the Energy Transition Mission by signing the Energy Transition Pact in March 2018. To date, signatory hotels represent 97% of the Principality's rooms.
Hostl de Paris Monte-Carlo
Several years ago, the Monte-Carlo SBM Group embarked on an ambitious certification programme. The aim is to obtain Green Globe certification in March 2019. The building has been entirely renovated under BREEAM (certification for construction and renovation projects that guarantees high environmental quality).
The hotel has been a signatory of the Pacte pour la Transition Energétique (Energy Transition Pact) since March 2018, and as such is committed to focusing its thinking on crucial themes in terms of energy transition, namely: waste management, transport issues and above all, empowering the customer. The hotel has also signed the Mr Goodfish pledge to respect marine resources and promote fish from sustainable fisheries.
As far as food waste is concerned, the Monte-Carlo SBM Group has adopted the "Gourmet Box", a personalised version of the Petite Boite Monégasque, which allows guests to take part of their meal home with them.

Hôtel Hermitage Monte-Carlo Group
In March 2019, the Hôtel Hermitage Monte-Carlo was awarded Green Globe certification. In a bid to use more organic, seasonal and local food, the hotel, under the impetus of chef B. Witz and the MC SBM Group's purchasing department, has developed a partnership with Terrae to create a vegetable garden on the Beausoleil heights.

Métropo Hotelle Monte-Carlo group
The "Green Attitude" is one of the strengths of the Hôtel Métropole, an establishment that respects the environment and is keen to reduce its impact in order to preserve biodiversity.
The Métropole Monte-Carlo is Clé Verte certified, Ecoleader on TripAdvisor and has been a signatory of the Energy Transition Charter since March 2018.
The hotel's restaurants have been awarded the Mr Goodfish label and are committed to serving only seafood from sustainable fisheries. They are also committed to combating food waste by offering a personalised version of the Petite Boite Monégasque.

Hotel Monte-Carlo Beach
Green Globe certified since 2014, the hotel was awarded the prestigious Green Globe Gold Standard certification in 2018 as a token of the efforts made on a daily basis to manage energy and water resources more sparingly, to offer healthier and more responsible cuisine, and to promote awareness and solidarity in partnership with associations.
By way of example, the hotel is aiming for energy sobriety and today buys the equivalent of its electricity consumption in renewable energy. In terms of clean transport, the Monte-Carlo Beach has electric vehicles and a private station for electrically-assisted bicycles.
The Monte-Carlo Beach is home to the Elsa restaurant, a gourmet restaurant where chef Mélanie Serre develops a "cuisine from the heart", with a focus on products and the harmony of flavours and colours, with generosity and without ostentation.
The Monte-Carlo Beach is a signatory of the Pacte National pour la Transition Energétique (National Pact for Energy Transition) and of the Label Restaurant Engagé (Committed Restaurant Label) for its Le Deck and Elsa restaurants.

Fair HotelMonte-Carlo Mountain
As a signatory of the National Pact for Energy Transition, the Fairmont Monte-Carlo works daily to preserve resources and optimise energy management (the Fairmont has 4 heat pumps which produce energy and supply the hotel with air conditioning and heating), water and waste sorting.
The Fairmont is also a signatory to the National Pact for Energy Transition and the "Wood Charter" set up by the Prince Albert II of Monaco Foundation.
Le Méridien Beach Plaza
Le Méridien Beach Plaza is Green Key certified and a signatory of the National Pact for Energy Transition. The hotel is also an EcoPartner on TripAdvisor.
Monte-Carlo Bay Hotel & Resort
Like the Monte-Carlo Beach, the Monte-Carlo Bay Hotel & Resort was awarded Green Globe Standard certification in 2018 after being Green Globe certified since 2014.
The hotel has achieved the feat of reducing its energy expenditure by 30% in just 8 years and continues to pursue its commitment to the environment by reconciling quality of service, competitiveness and energy management. The Monte-Carlo Bay & Resort is also equipped with a Smart + box that measures its energy consumption. In addition, photovoltaic panels were inaugurated in April 2019. At the beginning of May, the hotel also inaugurated the Principality's first supercharger for electric vehicles, in partnership with SMEG. With its 160kW capacity, it can recharge the battery of an electric vehicle in just 15 minutes.
Sustainable development is also present in the hotel's kitchens, thanks to Chef Marcel Ravin, who prepares fruit, vegetables and plants from the hotel's 400 m² organic vegetable garden, managed by Terrae.
A charter has also been drawn up with Mister Good Fish to respect marine resources, with a list of all the species recommended for each season.
The Monte-Carlo Bay Hotel & Resort is a signatory of the National Pact for Energy Transition and is a TripAdvisor Ecoleader.

Columbus Hotel Monte-Carlo, Curio Collection by Hilton
Sustainable development is at the heart of the hotel's concerns.
A signatory of the Pacte National pour la Transition Energétique, Hôtel Columbus has also been an Ecowatt PACA ambassador since 2012, and is therefore committed to reducing its consumption in the event of an alert during periods of high electricity consumption.
The hotel is connected to the SEAWERGIE network, a heat and cold production plant connected to the waste recycling centre and to an underground seawater pumping station built into the Fontvieille sea wall.
The Columbus hotel is listed on the WAYAJ website, the first application created to discover and book establishments that have an elaborate environmental policy. It is also listed on TripAdvisor.

Hotel Novotel Monte-Carlo
The Novotel Monte-Carlo was awarded the "Green Key" label in 2024, marking its commitment to sustainable tourism. By adopting a responsible approach to tourism and catering, the hotel has undertaken a number of changes, including the introduction of an environmental policy, responsible waste management, reduced energy and water consumption, the use of responsible products (particularly for food and cleaning), and active awareness-raising among guests and staff.
