Sustainable gastronomy

Committed Shops & Restaurants

To support restaurant owners in their environmental transition, the Environment Department has launched the ‘Committed Shops & Restaurants’ scheme, designed to promote best practice and encourage the reduction of plastic use, waste sorting and the fight against food waste.

Green Globe

As part of its ongoing commitment to responsible gastronomy, many businesses in the Principality are now Green Globe-certified. This certification programme, recognised within the travel industry, uses nearly 300 indicators to assess establishments’ commitment to sustainable development.

Terrae

For years, Terrae has been on a mission to establish eco-friendly urban agriculture throughout the city. The organisation, founded by Jessica Sbaraglia, designs, creates and maintains organic vegetable gardens – whether on terraces or on balconies and rooftops across Monaco and Europe. The growing areas adhere to the principles of organic farming, and the produce is intended for local consumption: for canteens, markets, restaurants and private households… Throughout the year, Terrae works tirelessly to raise awareness.

Mr Goodfish

At the same time, Monaco is participating in the Mr Goodfish programme, which aims to raise awareness across the entire fishing industry about more responsible consumption of seafood. Many organisations have signed up to this programme, ranging from fish wholesalers and schools to restaurants and hotels.

La Petite Boîte

As part of its ‘Monaco commits to tackling waste’ initiative, customers are free to ask La Petite Boîte partner restaurants to pack up any uneaten food to take away. By collecting uneaten food, restaurant owners and customers are helping to improve waste management.
