Whilst its menu is brimming with original creations, the restaurant is above all famous for its specialities featuring Atlantic bluefin tuna (Thunnus thynnus): akami, toro and other variations, enhanced by precise cutting and perfectly mastered seasoning. Committed to sourcing this fish in an environmentally responsible manner and to the conservation of the species, 99 Sushi sources its fish exclusively from the Balfego family, who are certified by the United Nations and the FAO.
