Two dinners, two atmospheres, for an exceptional New Year’s Eve

In one of its most elegant reception rooms, the Fairmont Monte-Carlo hosts its now-famous New Year’s Eve Dinner and Show. At the Monegasque branch of renowned Chef Nobu’s restaurant, an exceptional eight-course Omakase is being prepared, designed to combine the iconic dishes of Japanese-Peruvian cuisine with the essential ingredients of festive gastronomy: seaside caviar, snow crab, oysters and foie gras. Fabrice Didier’s gold and chocolate snowflake Yule log

Deliciously indulgent with its flavours of dark chocolate, tonka bean and Piedmont hazelnut, Pastry Chef Fabrice Didier’s Yule log is adorned this season with a shower of gold, a nod to the very special theme of this festive season: the 50th anniversary of the Fairmont Monte-Carlo.
Beneath a delicate layer of light, melt-in-the-mouth mousse, the Christmas snowflake reveals the Pastry Chef’s elegant and technically masterful work: a Piedmont hazelnut biscuit, a chocolate-hazelnut crisp, a 62% Madagascar dark chocolate cream, and two thin layers of mousse, one chocolate-Tonka bean, the other hazelnut.
Fabrice Didier explains: “I’ve always had a soft spot for desserts that offer both pleasure and comfort. The chocolate-hazelnut combination is a great classic, a must-have for festive tables. With top-quality ingredients and a carefully crafted balance between crunch, melt-in-the-mouth texture and lightness, this Yule log is my ideal version of a Christmas dessert.”
