Amù announces its summer reopening on the rooftop of the Fairmont Monte-Carlo

Ode to Riviera cuisine.

From lunch to dinner, the menu celebrates the cuisine of the Riviera, harmoniously blending the traditions of the Côte d'Azur and Mediterranean culture.

Generously thought out, Executive Chef Laurent Smeulders' menu celebrates the sun-drenched vegetables of the Nice region - artichokes, Taggiasche olives, local courgettes - as well as authentic, responsible local fishing and free-range poultry.

The flavours are strong and distinctive, with candied lemon, marjoram and truffle. A veritable anthology of tastes to be savoured facing the Mediterranean, with the shores of three countries as a backdrop: Monaco, France and Italy.

The sweets of Amù.

On the sweet side, pastry chef Fabrice Didier's desserts rival each other in deliciousness. Served generously from the pedestal table to the plate, they are a delight to savour: tiramisù, tarte Tropézienne, chocolate praline mousse... Classics mastered just the way we like them.

Aperitivo with music.

Amù's must at the golden hour, to celebrate summer evenings. Antonio Pepe's new cocktail menu, with or without alcohol and featuring house-made syrups, can be enjoyed with barbajuans, anchovy fritto, marinated peppers or pissaladière. Wednesday to Sunday, 6pm to 8pm. Live music and groovy atmosphere.

Mother's Day and Father's Day specials: two Champagne brunches in the sun.

For these two special occasions, Amù's chefs are concocting two generous, gourmet brunches on its sunny rooftop, designed to delight families: a buffet of Riviera specialities, a selection of land and sea dishes grilled to perfection, a selection of mature cheeses and homemade desserts. Refined décor, unlimited champagne, the sight of the sea as far as the eye can see, entertainment for the children: the perfect equation for creating memorable family moments.

Fireworks dinners, in July and August.

With its unique view over the sea and the entrance to Port Hercule, Amù is the ideal place to Enjoy the Principality's fireworks display in July and August. On the programme for these evenings is a tasty buffet dinner of generous summer recipes, live music and a breathtaking view of the festivities.
